We're deep into the dog days of summer and I know you're just itching for a day off. Well, I've got just the ticket, in fact I've got two tickets (thank you Olympus!) to the Rogers Cup at the Rexall Centre at York University, Toronto this Friday and I'm giving them away (ya that's right!). Wouldn't it be nice to spend the day watching tennis while sipping PIMMS and lemonade?!

So if you want them here's what you gotta do.

Email me (alannabanks@gmail.com) your favourite summer drink recipe with the subject line SUMMER SIPPER by 8:00 p.m. EST Wednesday August 11, 2010 and the person with the recipe that I like the most will win the tickets (got it?).

If you win here's what you get!

  • You and a friend get 1 ticket each to the Friday August 13, matinee game (matches start at 11:00 a.m.) in the Premium Series Gold seats Section 112, Row C (best seats in the house with VIP Lounge)
  • Your summer sipper gets featured on fridaysoff this Friday August 13 (I know, I know...that would have been enough of a prize, but I thought I'd throw the tennis tix in too)

Sara’s Punch

5c strawberries
2c fresh pineapple
Simple Syrup
2c Pineapple Juice (more or less)
2c Orange Juice (more or less)
1c Lemon Juice (more or less)
Fresh mint leaves for garnish

(Make simple syrup with 4c water and 3c white sugar, bring to boil then simmer for 8 or so minutes and let cool).

I start by using maybe 1/2 the syrup and pouring over the fruit (then add more depending on the tartness of the fruit and juices). Add 1.5c each of the fruit juices then taste, it will be sweet and concentrated but if it’s out of balance (too much pineapple taste or too much orange juice) adjust with the other. The concentrate should taste good, but strong.

Add mint leaves (tear if bigger and older or whole if they’re still new and soft…).

I keep this mix in a tall glass jug with a stirrer… give it a good stir each time and fill glasses to halfway then fill with champagne. If you hate having fun, you can use soda water instead of champers…

It’s great if you get a chance to cool it first, but if not so long as the bubbly is icy cold it should be okay.

Old School Margarita

50% Patron Anejo tequila
25% Cointreau (although Triple Sec is the original)
25% Freshly squeezed lime juice

Shake with ice.

Rub edge of glass with lime wedge and then dip in salt.

I like it straight up (but you can pour it over ice too if you like).

Anejo is good tequila, but you probably don’t need to go quite so expensive. Better tequila = better margarita though, and means you don’t need simple syrup and the flavors are all straight up and delicious.
